Other close nominees:
Demon's 1:57.925 on Maple Treeway (Glitch) - Without the implementation of the 2/3 glitch, this run feasibly could have lasted the length of Bean's WGM, assuming Demon himself didn't beat it. Insane sub and often overlooked because of the super cool 1 shroom glitch.
Blaze's 1:41.256 on Mushroom Gorge (No Glitch) - Very clean run. This category is one of my favorite to watch because of how dynamic the track is.
Chouy's 1:57.981 on GBA Bowser Castle 3 (Shortcut) - Insane run, especially considering the lack of chains. Contender for top 5 most deserved WRs of all time in my opinion. Fairly self-explanatory

Question THOUGH:
How is using 3 shrooms on lap 1 optimal?
Before, it was used to beat the black dog on the leash (forgot its name) on lap 3.
But, this guy is going to the zipper (along with anyone else doing this via optimized strategy) and that means using 1-1-1 would be more optimal.
I mean, there is only one spot where the mushroom is used at max potential. Not THREE.
So, if you don't need to use the triple shrooms in lap 1-2 to avoid the dog, why even do it in the first place?
Seeing as I have a fairly good time on this track, I guess that makes me "qualified" to answer this. The 2 shroom shortcut saves more time than two 1 shroom shortcuts combined. Since we don't get four mushrooms to take it twice, we use the 1 mushroom cut with the remaining mushroom.
3-0-0, 1-2-0, and 1-0-2 are the optimal shroom strategies. Using the 1 shroom shortcut on lap 1 doesn't save any more time than doing it laps 2 and 3 at a WR level, but it is easier simply because there is a goomba at the turn on lap 1. I don't know for sure why Guy specifically uses 3-0-0 as opposed to the other two shroomstrats, but I think it's just to get it out of the way and focus on other things.
Take a look at Rocky's TAS time of 1:18.399 for example:

If you multiply his lap 1 time by 3 (and then subtract like .15 to account for not having to start behind the finish line on laps 2 and 3), it results in a slower overall time.
Also the "black dog on the leash" is called a chain chomp
