The rest comes down to preference.
lol, I was going to say Nunchuck is best. You want an octogonal stick.
Now I really don't know about motion controls being better, but here is what I do know:
1) Motion controls turn differently. While drifting, they turn less sharply. Otherwise, more sharply. The difference is greater with less traction and with more slippery road. (This was tested by driving in circles or turning right at the start, so it says nothing for how well it enters the turn, or how nicely it handles.)
2) GamePad's stick doesn't turn as sharply as it's DPad. (Probably all circular sticks.)
3) While DPads make it easy to softdrift, they don't actually do it perfectly. With a bit of practice, an octogonal stick makes difficult SMT turns easier.
4) Having a brake button separate from the drift button lets you turn sharper at the cost of speed. (As above poster, I don't know many uses for it outside RR.)
So, it seems that a GameCube controller should be ideal, where motion controls aren't better. Unfortunately I don't have an adapter, so I can't use one. Second to that, use Nunchuck (octogonal stick) for most levels, and GamePad or Pro when brakes are needed while drifting.
