Because collecting coins in order to get your max speed increased is lame. Being in 1st in MK7 is waaay more rewarding than in MKWii, while for those who are in last were being punished for literally nothing because you had to take a slower path to collect the rest of the coins, the shock was very rare and the bill was nerfed to the ground. Yeah, MKWii has its flaws due to dodging being more rewarding than frontrunning in many cases. On top of that there were coins in Time Trials which is, imo, really stupid.
Instead of coins increasing your max speed, they should make items more powerful like in CTR with apples.
That's why I said I hope there are more coins in each track, I think it's a problem of how many coins are placed - and where - rather than a problem of coins themselves. There were some extreme cases of tracks where only the person in first could take the coins, for example NBC.
Btw, I personally liked the coins in TTs, I thought they allow for more strat experimentation and they don't mean you have to stop taking the best lines, there still are best lines to follow for each track but they include coin collecting.
Apart from that it'd be cool if coins give some other benefit this time around, for example boosting acceleration or item power.
I don't agree with your second point.

Imo the coins allowed indeed some new strat experimentations and stuff but to me it was more like an other way to fail a run (if a coin was missed) than anything else. So it made me restart about twice or 3 times more to get finally a good run.
That's also pretty much why I stopped TTing after 2 months playing. And the track that made me stop was DH. The coins at the begining + the glider boost + not falling when jumping down the path (because it was the strat back in February 2012). I spent 8 hours straight on this track and felt like I had lost my day for a couple of tenths to improve and didn't want this to happen again.
tl;dr I think the coins were more of another way to fail and restart a run than anything else...
@Sorozone, You should have read what I wrote in the other topic where I explained what I felt while testing the game. It will more controllable, but just when drifting.
