Waluigi Sea Bed, Sub Coaster and Wario Wheel seem to be the names of attractions in the theme park. Various WATER PARK boards are scattered over the course and seem to display a map of the theme park with its different attractions:

It appears there's also a 4th attraction with “Shell” in its name as shown by GameXplain's video (at ~12:40).

The op is a little outdated with the course titles and is missing new information. If a mod could update it, that would be great. These are the tracks we know of so far:

Nitro courses

Mario Circuit
Sunshine Airport
Dolphin Shoals
Sweet Sweet Canyon
Cloudtop Cruise
Thwomp Ruins
Shy Guy Falls
Bone Dry Dunes
Water Park
Larry Lights*
Boo Manor*

GBA Mario Circuit
3DS DK Jungle

* = not confirmed as the title. I've heard people refer to the village track as Little America due to its resemblances to San Fransisco and New York City. The Larry Lights name is based on a sign seen on the track, but as Game Explain pointed out, there is also a sign featuring another Koopaling with a different name on it, so the 'Larry Lights' sign could just be an easter egg. As for Boo Manor, there is supposedly a sign on the course with that name on it, but I haven't seen a clear picture of it.

If they follow their traditional pattern, there should be 4 more nitro courses and 9 more retro. We haven't seen a Bowser's Castle or Rainbow Road track yet, so it seems they're saving the special cup for a later update.

Iirc, MC was a fun track to drive on but that Boo Manor was VEEERY glitchy, especially the different corners of the manor you had to take under the water, so it was tough to get the most optimal angle to drift on these 3-4 corners... ^^
