Is it true that each vehicle has a different softdrift angle? If so, is there a chart?

(I'm going to assume you're talking about the Wii U version based on that video you posted earlier.)

Pressing diagonally (i.e. 45 degrees on stick / any two adjacent directions on the d-pad) always gives a soft drift regardless of vehicle. It's how WiiMote D-Pad players are able to do it.

As for 8 Deluxe, I don't know about that version cos I haven't played it.
